- Clean and decorticate the prawns, then cut them in two in lengh, season with salt and pepper.
- Prepare the chicken wings by turning the meat to the top of the wings to have a nice round form of the wing.
- Marinate it with olive oil and lime jus for 1 hour.
- Clean the spinach and keep it aside.
- Heat the olive oil and fry the shrimps for 5 minutes. Keep it hot in the oven.
- Pan fry the chicken wings in a big pan.
- Put some butter in a pan and cook the spinach inside, add salt and pepper.
- Remove the chicken wings from the pan, add some water , lime jus and chicken stock.
- Heat the mix and add the fresh cream to have a homogene sauce.
- Make a dome with the spinach in the middle of the plate.
Presentation : Decorate the plate with the chicken wings and prawns and sauce.
